Masala Chai

 1 ¼ cups water
 1 cup non homogenized whole milk
 2 tsp black tea (or 2 black tea bags)
 2 tsp sugar (or more, to your liking)
 3 green cardamom pods, crushed
 ½ inch ginger, grated
 2 clove, whole

Boil Water: In a small saucepan, add 1 1/4 cup of water and bring to a gentle boil

Add Chai & Spices: Once water has boiled, add 2 tsp of loose leaf black tea (or 2 black tea bags), 1-2 tsp organic sugar, 2 clove and 3 crushed green cardamom pods. Heat on medium-high, simmer, releasing the aromatic spices. *add additional 1/2 tsp of tea leaves if you like your chai more strong

Add Milk: Once the chai has simmered for 1-2 minutes, slowly add 1 cup of full fat milk to the pot. Now bring it back up to a boil (make sure it doesn't boil over!) Once hot again, reduce the heat. Stirring gently to combine.

Simmer: Let the chai simmer on a low boil for 1-3 minutes, or until it has developed a nice caramel brown color. Give it a stir every minute or so. Keep an eye on it.

Filter and Serve: Once your chai is ready, strain it into a cup using a fine mesh strainer (I like to place a small strainer over each mug). Taste and adjust the sweetness by adding more sugar if desired. Enjoy with butter toast, organic biscuits or masala nuts!
