Simple Kitchari

 1 cup mixed daal
 1 cup white rice
 1 green chilli
 2 tbsp ghee
 ½ tsp turmeric
 1 inch ginger
 1 dash hing
 2 tsp cumin seeds
 1 tbsp coriander
 1 red onion
 6 cups water
 1 tbsp garam masala

Prepare Daal & Rice:
- Wash daal well and soak for 1-4 hours, rinse
- Wash & drain rice separately

Cooking Daal & Rice
- In a pot boil prepared daal & rice with 4-5 cups of water, remove any foam from top then reduce to simmer
- Add chopped ginger, 1 to 2 slit green chilis, 1 tbs ghee, turmeric and 1 *dash* of hing (optional)
- cook with lid half on for 20-30min, *add water as needed, it should be a porridge consistency*

In separate pan:
- add 1 tbs ghee to hot pan, over medium heat
- add cumin seeds and roast until dark
- add sliced red onions & coriander seeds, cook for 6-7min
- add garam masala

Combine:
- combine onion masala mixture with daal
- add 1 spoon of mineral rich salt, add water as needed
- simmer on low for 5m (lid on)

Serve:
- serve hot and enjoy with a big spoon of ghee & fresh cilantro leaves, chopped
