Add the chopped celery and carrots to the pot. Sauté for another 5 minutes, stirring occasionally.
Stir in the salt, then place the whole chicken into the pot. Pour enough hot water to fully cover the chicken. Bring to a gentle boil over medium-high heat.
As the soup comes to a boil, skim off any foam or impurities that rise to the surface. Add the rosemary sprigs and dried thyme for flavor. (Don't skip the herbs!)
Reduce the heat to a low boil, cover and let the soup simmer for about 35-40 minutes, or until the chicken is fully cooked and tender.
Carefully remove the chicken from the pot and let it cool slightly. Shred the meat from the bones, discarding the skin and bones.
