Healing Chicken Soup

 2 tbsp Grass-Fed Butter
 1 Large Yellow Onion
 3 Cloves Garlic
 4 Carrots, Medium Sized
 4 Celery Ribs
 1 Whole, Pasture Raised Chicken
 2 Sprigs Fresh Rosemary
 1 Sprigs Fresh Thyme
 1 tbsp Sea Salt

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent, about 3-4 minutes.

Add the chopped celery and carrots to the pot. Sauté for another 5 minutes, stirring occasionally.

Stir in the salt, then place the whole chicken into the pot. Pour enough hot water to fully cover the chicken. Bring to a gentle boil over medium-high heat.

As the soup comes to a boil, skim off any foam or impurities that rise to the surface. Add the rosemary sprigs and dried thyme for flavor. (Don't skip the herbs!)

Reduce the heat to a low boil, cover and let the soup simmer for about 35-40 minutes, or until the chicken is fully cooked and tender.

Carefully remove the chicken from the pot and let it cool slightly. Shred the meat from the bones, discarding the skin and bones.

Add the shredded chicken back to the pot. Stir to combine and let it simmer for another 5 minutes to meld the flavors.

Taste and adjust the seasoning with more salt if needed. Serve hot, garnished with fresh lemon juice or pepper if desired.
